American Lasagna

Mama and I were just talking about this.

When I was young, we ate a lot of lasagna at potluck dinners. It was always the same recipe: chunks of ground beef, tomato sauce (sometimes stewed tomatoes), and cottage cheese. I love cottage cheese. Mama can't stand the stuff.

When I got home from Italy, I showed Mama how to make lasagna alla bolognese, and that's the only lasagna we've ever made. We've eaten a lot of lasagna at potluck dinners. I'd swear that it's the same recipe as the one from my childhood, except that the cottage cheese has been replaced by ricotta. Mama loves ricotta. I can't stand the stuff.

So when I asked Mama for a recipe for American lasagna, she thought for a while, and then told me that she had never made any. I think that our dear friend, Mary Wood, had a good recipe, but we've only eaten it, not made it.

So there is no recipe for American lasagna in this cookbook. That's funny and sad, both at the same time.

p.s. I didn't say that I enjoyed all that American lasagna, only that I'd eaten it.
